There are so many that it's hard to pinpoint. Here's my list:

Greatest - Andres Segovia
Most virtuostic - John Williams and Paco de Ludia
Fastest - Django Reinhardt
Most soulful - Mark Knofler and David Gilmore
Most underrated - Randy Rhodes and Terry Kath
Most innovative - Adrian Legg

Most gifted person to ever touch the instrument - Jimmy Hendrix. For someone who never had a lesson, he incorporated blues, jazz, rock, just about everything you can imagine. Genius flowed out of the guy at an alarming rate. He musicianship was pierless. I've been playing for about 40 years now and I feel ashamed whenever I listen to him. I'm soooo not worthy.
